HUMMUS. Seriously one of my fav foods EVER. My go-to version used to be a hummus made with tahini and cumin. One day I ran out both and still had the hummus craving. The horror!! So what do you do on days when the weather is super cold and rainy, you refuse to get out of the house, and determined to make hummus happen?
Well, you improvise of course!
I looked around the kitchen to see what other things I had.. and decided to give sesame oil and curry power a go. Although it’s not exactly the same recipe as what I usually make, I was pleasantly surprised with my new hummus. It’s basically hummus, with an added roasted flavor from the sesame oil. I thought it was pretty good. I had a few friends try it out when they were over, and they mentioned it tastes better than the usual stuff I make with tahini.
Guess I better start sticking to this one than!
100g frozen spinach (or two handfuls fresh)
2 cups chickpeas (basically, 1 can)
1 tablespoons soy sauce
2 tablespoons lemon juice
30g peanut butter
1 clove garlic
1/4 cup sesame oil
Pinch of salt
Pinch of curry powder
Step 1: Prep chickpeas (boil accordingly or crack open the can)
Step 2: Combine everything in a food processor (or a Blendtec) and blend until smooth
Step 3: Put it in a nice dish and garnish with extra sesame oil and curry powder on top if you feel like it.
